Brick stitch:
Fairly simple once you get the hang of it (including how to increase and decrease the pattern). Easy to create a solid pixelated image for the player to reproduce

Herringbone stitch:
This one would definitely be up a level of difficulty

Netting:
This is like the African bead patten I originally had in mind. But it's not quite right. Will have to try to find some old bead pattern notes. God knows where I've filed them

Peyote stitch:
A bit like a cross between the African net i was telling you about and the brick stitch

Right-angle weave:
Looks a bit like Peyote stitch. Not sure how different I'm going cross eyed

You could see how big a jewellery collection you could make and compare it online to other people? It could be two player as two people try to complete the pattern and see who does it first?
How would you pick the correct bead to use? Flick through your options before clicking or pick up a bead from the side 'library'? Is it a limited library so there are only the exact colour and number of beads required to compete the pattern? Or is it unlimited? Are they colour separated or mixed (so you have to sort through to find the right colour, like in real life
